Eyes. Even when going just to the end of the road and back, to check everything is ok on the bike, and I'm wearing non-cycling specific apparel, I'll always put glasses on, as my eyes stream at anything over 5mph.

I wear a cap more often as the hair gets thinner. The peak keeps a lot of stuff out of the eyes as well. I pretty much always wear mits.

I had to think about this one!
Constant apparel for me are gloves for protection and for dulling road vibrations, a buff around my neck even in summer and a cap or woolly hat.
I suffer from tonsillitis and head colds, if there's any slight breeze I get sick if riding uncovered.

Heads* hands and feet:

* I was the inspiration for Douglas Adams' Zaphod Beeblebrox. (Actually, I gave him the name for one of his characters, but that's a story for another day.)
