Of course, it's really Creme Catalana anyway...


The ever reliable Mrs Beeton lists a very similar British recipe, called, surprisingly, "burnt cream". That doesn't have any crap in it either, just as it should be.

When we had people over for dinner, we used to do a cheat's version.

Fruit in the bottom of a ramekin (peach, usually), and some of those tiny little macaroon biscuits.

Creme Fraiche dolloped on top, then chill.

At the last minute, do the sugar/grill thing.

No one ever complained.

Creme brûlée is lovely, that's my phone's choice of accents not mine.

The loveliest one I've had is in a French restaurant in Soho called Pierre victoire, a cold brûlée with the crispy spoon breakable top. Perfectly caramelised!!
This is the controversial bit, a smattering of raspberries and White chocolate.

The nicest creme Catalana that I've had is from Cal Pep in Barcelona, a great tapas bar. The creme was frothy and ever so light with a slightly denser top served in a tiny little glass.

Very nice!
