Didn't see a thread like this around so thought I'd start one, as I'm looking for some inspiration.

Our dinner's are usually quick and unexciting. Tonight I had sausages, mash (previously cooked and frozen) and some beans. GF working late so was left to my own devices.

I've found some of the Slimming World recipes to be very tasty

Here's one for turkey burgers

Grate two courgettes and a medium onion into a large bowl.
Add 500g of lean turkey mince
Add one or two finely chopped chillies
Add a heaped tsp of ginger puree or 2 tsp of finely chopped fresh ginger
Add salt, pepper and a dash of mixed herb
Add a splash of soy souce and one egg yolk

Mix the stuff together until throroughly mixed.
Divide the mix into six or eight.
Shape into burgers

Put them on a foil covered grill rack that has had the foil liberally pierced to allow the juices to drain
Grill for six or seven minutes each side

Serve with salad and Slimming World chips.

I had one of those leftovers meals that turns out to be quite nice. Gently fry up some onion and garlic in a large pan, slice & boil floury potatoes, then add to the onions and dust with paprika - turn up the heat to give it all a bit of colour. Added in some cooked chicken (leftovers from a roast) and some spinach I blanched for about a minute. Pour over 5 beaten eggs with some grated cheese, finish under the grill, and you've got a pretty good tortilla.

Getting the messages
There are always special offers on decent sausages, just buy lots and freeze them for when you need them. Toad in the hole is a favourite. Equal parts by volume (1 mug full) of plain flour, milk, eggs, add seasoning, mix and leave to rest until sausages have coloured a bit. Some oil in a dish into the oven and get screaming hot before adding sausages and tipping in batter mix. Serve with mash and onion gravy, yum!^_^
