The cockerel that went in at 7.30 this morning has come out of the oven and is resting.

I read "cockerel went off at 7.30" , that is an early wakeup call for christmas morning, no wonder...but at least you are giving him a nice rest.
 
Had a lovely gammon cooked a la Hairy Bikers from their "12 Days of Christmas" book. Wouldn't cook gammon any other way now - always comes out spot on. But swapped the honey in the glaze for a reduction of red wine, balsamic and my mum's cranberry jelly. Went down a treat with roasties, braised red cabbage and the pan juices dribbled over everything. Was lush. And just as good cold. :hungry:

Fried up some left over ham and roast veg last night - very tasty.

Anyone got any Christmas dinner leftover recipes I can use before the veg, turkey and ham goes bad?
 
Make a parsley sauce (don't make it fairly thick), fold in chopped turkey and ham. Roll out puff pastry, cut into rounds. Put a dollop of the ham & turkey mixture on one half. Brush edges with eggy wash. Fold over into half moons, crimp edges, then brush with remainder of eggy wash and wang in a moderate-ish (around 180c) oven for half an hour.

For the veg, either soup or a cheesy bake. make a cheese sauce, fold in the veg, pour into a pyrex, cover with breadcrumbs, butter & grated cheese and wang in the oven for half an hour at 180c.

Serve with left over veggie tray bake

Place all the veg in a roasting tray (spuds halved, carrots, parsnips, Brussels) any left over pugs in blankets add a couple of red onions cut into wedges, a couple of bay leaves, sprinkle with some thyme, drizzle with olive oil, season and bung in the oven 180c until hot.

Just put a brace of pheasants in the oven for tea tonight. My sister shot them last week, and I picked them up on Boxing day. Will have them with a red wine and red currant sauce.

Home made Fettuccine E Pollo Gratinati.

Basically a fancy cheese sauce, pasta and chicken.

Also made tomato soup and a trifle this afternoon. Might be let out of the doghouse soon.
