What's with this raw meat thing?

waffly: You'll have noticed Roux usually comments on how the meat is cooked? In the case you're probably thinking of (lamb shank, wasn't it?), Roux actually said something like 'This is not cooked through, it's still raw in the middle', and I think didn't even try it, or sliced some off the portion that had at least felt the fire. For the duck, equally, the food critics commented that one contestant's hadn't been left to rest, so juices were still flowing out of it.

That's the only 'raw in the middle' examples I can think of from this series.
