Who uses a blender for making soup? Any really simple recipe ideas?

Tomorrow I am treating myself to a blender, not a hand held, a proper job.
Soup is my 1st target with 2 types on my mind.........
Brocolli and Stilton
Mixed veg.
When I google it they make ideas so complicated with ingredients I don't keep eg cream!! I am on my own, why would I have a tub of cream in the fridge.
So........
1. Any simple recipes.... any type of soup ?
2. What else do you find a blender handy for ?

Leek and potato always a good one. Made some yesterday.

Sweat off chopped onion, leeks and potato in a good amount of butter. Then add veg or chicken stock and some milk.

Simmer until potatoes well cooked and then blend. Season to taste.
 
My wife just uses broccoli (500g), Stilton (200g), vegetable stock (1L) and seasoning. Boil broccoli in stock till tender, blend, stir in cheese.

Tonight it's minestrone though. More complicated apparently.

Squash soup is a cinch. Just prepare the squash into small chunks, soften it in plenty of butter in the bottom of a big pan over a fairly high heat, add 200ml stock/water (a veg or chicken stock cube works fine), add spices, and milk/cream if you like, simmer gently for about 40 minutes till everything is soft, and then blend (I use a hand blender in the pan), adding more milk if you like a runnier soup. Easy peasy, and delicious.

If you use pumpkin, you need to add more flavour, as it's quite bland au naturel, compared with squash.

I ought to do more veg variations really - such a cheap & filling lunchtime snack, with decent bread.

Hmm. Make a lot of soup. My blender has various modes but the stick blender I find easiest for soup.

Recipes. Various veg chicken stock. Can’t go wrong

Curried lentil lovely this time of year.

Sorry I don't like soup so I don't make it, but:
I am on my own, why would I have a tub of cream in the fridge.
I live alone too, I often do have a tub of cream (which, admittedly is excessive for one pot of soup) for cake fillings or to make chocolate truffles.
You can also make nice pasta sauces based on cream.
What else do you find a blender handy for ?
Making icing sugar ^_^

I use creme fraiche for soups, if I'm being decadent, and forgetting I've got a heart op coming up - it keeps for quite some time once open, and is good on puddings too. In the past, in France, I've nearly always had a pot in the fridge, as it's cheap. Aldi do a very good creme fraiche.

Agree that this is good and easy soup to make. I add some chillies and eat it with cheese on toast :okay:

I made tomato soup today. A couple of onions, four or five carrots, four or five spuds, chop the lot up and chuck into a big pan (on the hob) with some butter, low heat until the butter is melted, and a couple of tins of chopped tomatoes. Chuck some basil in if you like it, stock cube and two or three tins (use the chopped tom tins) of water.

Bring it to the boil, turn down and simmer for a couple of hours until everything is nice and soft, the longer you let it simmer the better it is.

Whack it in the blender and whizz it to death, you might have to do this in 2 or 3 batches.

This makes 5or 6 servings, if that is too much for you, let it cool and freeze.

I think the carrot helps with the flavour and the spuds help with the thickness of the soup, but I ain't no expert.

I've just recently started making my own soups.
Sweet potato & leek was very nice, added onion and a pepper, 2 veg stock cubes and around 600 mls of water.
Let it all bubble away for 20 mins then blended with a stick blender for a few mins, makes around 3-4 portions.

Next time I tried normal white potatoes and added some cumin to pep it up a little, handy to have some frozen for work lunches.

This is a simple soup & very tasty (nice kick with fresh ginger). You could recuce the quantities down & just use 1 Butternut Squash. It also freezes well, hand blender makes it super smooth.

Hmm, hand't thought about ginger with squash. That's one to try, plus I ought to experiment with other Indian/curry splices & flavours, for variation.
