They are bullocks. Dem's boys. No udders kinda gives it away.

They don't have udders till the are growed up girls and have babies - till then they are heifers, but might have a slight lump in the middle where they were attached to the umbilical cord in the womb. The boys (steers) would still wee from their middle and have more of an obvious hairy protuberance there, even if their testicles have been unceremoniously removed.

OTOH, if you've seen these wee from their middle rather than the back end, I'll concede the point.

I worked on a farm aged 14 onwards.
I live adjacent to a dairy farm.
We live in one of the highest milk yielding areas in western Europe.
The muscle development on those bullocks is quite different.

Simple test: if they wee from their bums, they aren't steers. I've seen enough heifers' teats to last several lifetimes, and was dealing with 800 cows' teats per day (that's 100 cows with four teats x two milkings per day). The farm produced about 750,000 litres of milk per year.

Someone once tried to correct me when I said I put my hand up the cow's rectum to do bovine AI (artificial insemination, not intelligence), so I gave them a detailed anatomical description of the process.

I'm also an expert cattle hoof trimmer.

Playing the trumpet is a somewhat less smelly job though. Generally.
