Currently looking at upgrading a bike to either 5700 or 5800 if in an emergency while on a trip one bike will have 10 speeds wheels and one 11 speed could we swap a 10 speed wheel on to the 11 speed set up to finish an event if we had a puncture on the 11 speed
What I'm looking at is compatibility between the two bikes on a trip to the alpes if we had problems with the wheels or cassettes so that we could just swap over in an emergency not long term use

Yes, you can just swap over in an emergency. It won't shift as cleanly, but if you just need to get out of bother, it should be acceptable. You may need to acquaint yourself / get handy with the barrel / trim adjusters.

Ok we wouldn't have time to adjust anything it's realy just to finish in an emergency and would only need to use it over a few Ks going up a climb if their was a puncture half way up or near the finish or something like that so only a couple of sprockets would be needed anyway

Currently running the other halfs Liv with Ultegra 11-speed with a 10 speed cassette with no problems;only issue may be the chain falling off the top or rear sprockets but if it should be fine.
