105 gone backwards?

Previous bike: 105 5700/5701. Shifters and RD silky smooth. FD worked fine as far as FD's go.

New bike: 105 5800 + RS505 Hydraulic Shifters. Very positive and crisp shifters and RD but neither are silky smooth. They feel 'cheaper' than the older version. FD works about the same although I've yet to get used to the new fangled trim system.

Maybe they just need to bed in? Only done 160 miles or maybe they just aren't as svelte?

No.

5700. Big ring- one trim position inwards (ie towards the frame). Change down to small ring and then there was one trim position outwards (ie away from the frame).

5800. Change down from big to small ring and the trim position is inwards.

What do you have on your rather fetching Ridley?

Ultegra 6800 on the Ridley. Used to have 5700 on previous ride, but forgot it didn't have the double movement.

Front shifting is much better as a result of the longer arm though, which surprises me if you think 5800 isn't as smooth.

The 5800 group on my Mason is smoother than the Ultegra 6700 I have on my Thorn. I have read reviews though that the hydro shifters (which are non series) are not as good.

The brakes are hydraulic, not the shifting..

I think this is probably the reason why they don't feel so slick.

I have ridden other three bikes with the same hydro shifters and they feel exactly the same as mine - hard to explain really what feels different but my best shot is that my old 5700 feels like the moving contact points within the shifter are covered with velvet but the hydro shifters you are aware of hard surfaces touching each other.

Not a big deal, everything works just fine esp' the brilliant brakes it's just that the feel is slightly retrograde imo.
