Despite what they say, Guinness doesn't taste better in Dublin - and the alternatives (Caffreys-alike and lager) aren't worth drinking. Find a bar which sells something else.
Temple Bar pub is ok but I preferred the Auld Dubliner down the street. Head for the top floor and there's usually a band on. Across the street is Gallacher's Boxty House which was a decent restaurant when I went in last. (about 2007)
This bloke does a good walking tour describing the 1916 uprising. http://www.1916rising.com/
A visit to Kilmainham gaol afterwards would fill in the gaps, its a short walk from the guinness experience through the grounds of the art museum.
1. Guinness tour is pretty good
2. Kilmainham Gaol tour is excellent. You can book in advance I think to avoid the queues.
3. Tour bus, hop on hop off is very useful
4. John Kavanagh ("The Gravediggers") very traditional pub next to the cemetery. Proper old school boozer
Croke Park for all things Gaelic sports.
Kilmainham Gaol, as nickyboy said.
Various themed walks -- literature, food, whiskey, music, independence, etc.
