700c wheels to 27"

Hi does any one know if you can change wheels from 27" to 700, looking to build a cheap fixie and i have a spare set of 700c wheels and tyres, have been looking at some old frames on ebay, they all have 27" wheels, so can i swop them and will i be able to use 105 brakes,

yes but you will need longer drop on brakes to fit the 700's , might not be able to use the 105's
