Yep, you've got to make sure it's ripe whatever you do with it. Brie and camembert really do need to squish.
Generally, I buy one now to eat in two or three weeks' time - I just let them ripen slowly in the fridge. If you go to a good cheesemonger, you'll be asked how soon you'll be wanting to eat it.
BTW, the Tesco brie from their festive range is a very good buy - it's £3 for a 470g wheel, which works out half the price (nearly) of the standard stuff. I bought one on Tuesday and it'll be ready in time for Xmas

The little brie with truffle they have is also very nice.
