Anyone ridden more than one of the current Shimano groupsets?

Personally it comes more down to maintenance and choosing the correct gear ratios for your riding. I have 105 with discs on my gravel bike and it is fine on or off road. I upgraded my XC mountain bike to the XT groupset a few years back, brakes far better, gear change not much difference and it looked better !

I have one bike with current Sora and one with current 105.

Both do their job admirably.

If I was buying another bike I'd go for Sora again because 9 ratios is enough for me; I'm not fast and the whole hierarchy thing doesn't interest me.

All are fine. The 105 has a distinctly better "feel" and is generally nicer. So if "nice" is your thing, that's worth noting. But if "perfectly good enough" is your thing ... it isn't.
The SRAM broke, which wasn't good but before it did that it was OK.
