I wouldn't worry about it. We have been travelling through Italy and other parts of Europe this summer and even during the highest week for tourism in Italy we were able to find a spot for our tent, even though we sometimes arrived late in the afternoon or early evening. If you're driving an RV that's a bit harder to squeeze in but a tent fits in little corners so while your spot may not be the most glamourous, there's always likely to be a spot of some description.

Fiedel's certainly right about Italy, they won't turn you away. At a site at Canezi in the Dolomites the guy was squeezing new arrivals in between tents all over the place. Our tent only just went into the space that he found for us, with only about a foot or two between us and the adjacent tents. Obviously the Italians don't have the fire regulations that our local councils have or perhaps they do and choose to ignore them in true Italian style!
