FWIW when I did my conversion I used a 68 x 110 which gave me a perfect chain line. I could also have used a 68 x 107 as the difference between the 68 x 110 is on the non drive side.
Ive checked the chain line this morning and it looks OK to me. The proof will be when its back together i suppose.
The question is, how do you know what BB to put on, other than trial and error?
This is where the traditional cup-and-cone axles came in. It's much cheaper to just replace axles. Sheldon Brown has a nice listing of BB lengths for brands of chainset, but yeah, trial-and-error it is.
