Why impractical? Any more than any other tandem? In fact, the captain having eyes in the back of his/her head seems very practical!
I've had a brief go on a back to back recumbent tandem, and it was fun - I normally hate being stoker, because I'm too nervous, but not being able to see where I was going was quite calming...
Well, OK perhaps not impractical, but definitely reserved for people who have a lot of trust in the driver. I for one would always need to see where I was going

But as tandem stoker, you have to trust the captain anyway! A good captain will always warn of impending potholes, turns etc, whether the stoker can see or not (a lot of blind people stoke tandems). If you're like me, and you can see what's coming, you try and react, and that's bad for handling!
