They are the ones I have been looking at but shoes in my size seem to be the issue.

I am looking for more of a touring style shoe where the sole overlaps the clips so I can alternate between the sides of the pedals until I am more in tune with being clipped in.

It was so much easier as a kid with my Raleigh burner and puma trainers. All this equipment I am now looking at starts to double the price of the bike before it has even turned a wheel.
What you call double-sided are in fact really single-sided! Double-sided pedals such as the M520s I suggested earlier have clips on both sides. It is better to go for double-sided so you don't have to think about which way up the pedal is. If you go for single-sided (with flat platforms on the non-clip sides) you will end up clipping in when you do not intend to, or failing to clip in when you do intend to!

It is not difficult to get used to SPDs, so the best thing is to just get on with it. After a week or so, you will not even think about them any more.

As you said single sided might be the correct the correct terminology.

Shame you can't try before you buy with shoes and clips but as you say it's easy to get used to so I might bite the bullet.

I'm in no rush because I am currently bashing the mtb around to get fitter so I don't look like a fool puffing and wheezing leaning on my nice bike at the side of the road.
