Carrot cake recipes

I have a good one but no time to type it up ATM.
If I remember will bring it in and scan tomorrow. It involves pineapple.
The icing is tricky; it requires 4 cups of icing sugar, and I've never managed to get them all in. Warning not to overbeat as it makes the icing runny doesn't help.

Here you go , help yourself to a virtual piece. I used the recipe Helen recommended, though I don't reckon I've done it justice. The cream cheese filling was a bit overpowering and I put it in when the cake was warm because I was too greedy to wait. Tastes good though.

Funny now I feel too full to eat anymore and the yipper has gone.

A bit late, but in case somebody wants another recipe, here is one I posted some time last year. I've modified it a bit, the original measures are in brackets where different. It's very easy & quick - apart from the cooling time!

Courgette & carrot cake (or just carrot cake if you prefer)

- preheat oven to 175C/Gas 4 and line or grease a deep cake tin
- sift
250g plain flour
2 tsp baking powder
1 tsp bicarbonate of soda
1/3 tsp salt (original recipe says 1 tsp :rolleyes:)
into a large bowl
- stir in
200g caster sugar (ordinary sugar works fine too; original says 250g)
25g mixed chopped nuts (any will do - original says pine nuts)
25g sultanas
- grate
250g mixed courgette & carrots (or just carrots)
2 bananas (recipe says mashed, grating is quicker)
- mix grated fruit & veg and
3 eggs
with the dry ingredients
- [the recipe says to add 150ml sunflower oil, I found this is not
necessary at all, have reduced it right down to nothing, makes a
MUCH lighter cake, and you can eat more :becool:]
- Put in prepared cake tin & bake for up to 1 hour (test with skewer)
- Leave to cool completely in the tin

(I've previously put a double batch into a rectangular oven-width size tray, it bakes a bit faster, and you get many more slices out of it)

Icing:
- In a small pan, heat
40g butter +
2 tblsp water
- when melted, sift in
175g icing sugar
+ (optional) a few drops of vanilla essence
- stir until smooth
- leave to cool for a bit (stirring occasionally) if it's very runny, then
spread over the cake & leave to cool, it goes solid.

Are you sure about that?
Oh well, I'll just have to bake my own carrot cake then... just need to pick a recipe :smile:. The carrots have been purchased :biggrin::wahhey:
