I'd be riding at a gentle 'pootling' speed just to work any stiffness out.

Legs sore to touch aren't just a bit stiff. I assume the OP stretched nicely after the ride and still hurts

The correct answer is whatever is best for you, long term. If you are training seriously for something, then taking a day or 2 off every time your legs feel sore is going to limit long term progression, if however you are a leisure cyclist then taking a few days off is going to be neither here nor there.
