Not noticed anything but maybe, carpets don't feel damp.
Press as hard as you can on them. The water soaks into the sound deadening material under the carpets so the actual carpets don't feel wet to touch unless there's an awful lot of water in there. If you have rubber mats on top of the carpets, you might see some condensation on the underside of the mats.

Personally I just drive through a car wash with the windows all down.

Cleans not only the windscreen, but the entire interior!

For a quick clean, use a correctly dampened chamois (correctly being sodden and rung dry)

For a proper go, use autoglym glass polish, it dries to a powder and rubs off dry and streak free

B&M Bargains sell a window cleaner trigger spray with white vinegar for £1 per bottle. Use with newspaper. Car smells a bit vinegary for a day or so, then back to normal......

I do keep the fan on low when driving but I am talking about why the inside is so badly misted up when I first get in it?

Not all the time but on occasions where other cars are not affected at all.

Because your car is chronically damp inside. Check for damp carpets, which indicates a leak or a blocked AC condensate drain. Air the car by opening windows in sunny weather.

Do you have water leaking in somewhere and gathering in the footwells? Maybe not obvious as it gets under the carpets. Every Volkswagen I ever owned ... leaked. .... and especially the supposedly waterproof seal behind the door panel.... Anyway, once that damp gets inside the car, it will evaporate slowly and appear on the inside of your windows.
Very common in Skoda Fabia too - as I now know and is everywhere on the Skoda fora/ forums too.

Great wee car  but wet rear carpets - window/door seals, apparently.
