When I ride solo which is majority of the time I listen to music or podcasts through ear buds. The pros and cons of that are for another day...

However, I've just found out the later Wahoo Bolts and Roam can control the volume/skip tracks/pause etc via the GPS unit and I believe satellite shifter buttons on Di2.
This interests me a lot as up to now I've had to fiddle around with phone in jersey pocket to alter vol etc.

My current GPS unit is the original Bolt V1 which I've had for 9 years and it's still going strong but I've been tempted anyway to upgrade to a Roam V3.

Question is does anyone use this feature and if so how effective is it? I'm on Android phone for info as I've read there's been issue with IOS phones.

I can do all those functions by tapping the ear buds.

Yes but that is inprecise in my experience when riding and a slightly wrong press means pausing music or skipping track by accident etc so I'm definitely looking to do via head unit.
