Why are you having to keep returning to the screen?

The instructions say to choose your preferred language, press then dial, then do to the app and add as a new device. One you add the device it move on and you continue in app to finalise setup and customise things.

Are you pressing the dial in toward the gps, after scrolling to the language?

Yup! Scroll then press to anchor selection - except on the one I bought, it is not setting it.

Anyway, different comment:
Coros is completely owned and operated by Chinese interests; Wahoo (my other cycle computer) is US owned and operated.

Irrelevant. The company is headquartered in the USA and every communication I have had with them has come from there. Even the coach they assigned me for my “fall” marathon last year was an American. Wahoo have also had to raise their prices recently in the USA as they are manufactured in Asia so subject to higher tariffs.

An answer to the question I posed in post #16 may be helpful to try and understand your problem better.

You are obviously unhappy with the device and trying to find fault, unnecessarily, with the manufacturer. So why don’t you return it and buy another Wahoo device?
