You are correct about that but if you can get some genuine Mature Cheddar that is the best combination IMO !!!!!!!!!!!!!!!!!!!!!!!

Stilton for me with a glass of tawny port, and butter, none of that flora on the biscuit and the digestives MUST be McVities.

Only blue, either Danish, or preferably bleu d'auvergne on sweet crackers is acceptable.
A nice brie or camembert may be substituted in times of desperation, but only if accompanied by a rather tart Autumn chutney

A proper linen wrapped cheddar truckle, or a softer creamy blue I get one called Isle of Wight blue,and on the same lines as the digestive the hovis biscuits are nice

The Cheddar must be gum burningly strong, and if your cheese must have a blue vein in it then Roquefort is the only cheese to have. Now't wrong with digestives but I prefer a Carrs water biscuit with a smear of Lurpak before I put the cheese on.
