Can I answer - BOTH!
I really enjoy touring with my wife, but it is always planned down to the stops, about 35 miles a day and we know where we will be staying
When I tour it is always more eclectic, I often take long detours, don't mind getting lost exploring the area, and rarely book accommodation, preferring to simply phone a local tourist information when I have an idea where I want to stop. Somewhat faster, and often with no planned mileage. Just keep going until you find somewhere you fancy stopping. A day can vary from 30 miles if there is lot's of interest to 100 miles if it is excellent cycling country.
Neither is better or worse, just different
