If I took the kale out, that'd be really rather nice. Maybe swap for shredded savoy cabbage...

It does work very well with savoy cabbage

We always eat the greens off cauliflower as well. They are very nice when young.

As much as I love my folks they both cooked veg until it was soft which put me right off, so I rarely touched veg when TVC and I got together, but with his prowess in the kitchen he has opened my eyes and tastebuds to the delights of new and exciting flavours.

I always used to throw them away, until I got interested in the issue of food waste in general and realised that, of course, they are just another shape of cabbage!

I had cavolo nero with my Christmas dinner venison, and actually it was nicer than the venison .

Beetroot leaves are very nice as well. I bet loads of folk chuck 'em away.

I would add a caveat for anyone tempted to try the green tops of veg that they have previously avoided. Best do a bit of research first.
For example - Rhubarb is very nice......but its leaves are poisonous (Oxalic acid).
