Faster tires for a hybrid bike?

Other than the obvious what are the differences between wired and foldable tyres? I see that the wired tyres tend to be cheaper, are they generally lower quality and are they much harder to get on and off?

Weight, folding lighter (and not necessarily easier to handle)...and easier to transport

I would say, yes, yes and yes and they are heavier too.

In the case of some tyres (notably Vittoria Voyager Hypers), they're actually completely different tyres, with the brown wired ones using a much coarser base.
