I'm thinking of cooking some turkey biryani on boxing day, with the leftovers.

What kind of stuff do you cook? Any good ideas?

My old mum used to do a sweet and sour with the left over meat, a tradition that I continue.

Those turkey sandwiches in fresh bread smothered in mayo, bit of greenery eg. lettuce and alfalfa. Pretty good aren't they?

We layer the leftover meat in a pie dish, then some of the leftover veg, mix the bread sauce and stuffing into the gravy and pour it over, then top that with some fresh mash potato. Bake until golden brown.

Yes to bubble and squeak with a fried egg on top to round off a day of turkey, sausage, lettuce, mayo and cranberry sauce butties.

Although Cubist's 'mash it all up pie' sounds yummy too!

We tend to have a bit of gammon to ring the chances, or just a repeat of Christmas Dinner with cold meat (chicken usually, not turkey), and maybe different veg.

Having had a frugal upbringing, where every bit of roast chicken was carefully allocated to make it stretch over 4 days, the freedom to just make a sandwich whenever you fancy, with as much chicken as you like, is one of the real joys of Christmas for me. My favourite version has a little leftover asparagus and hollandaise sauce in with the meat...

Another bubble and squeak fan here, served with a poached or fried egg and Branston Pickle and maybe some leftover nut roast.

Here's a tip - if you like bubble and squeak made with sprouts, and you like chestnuts, try bubble and squeak made with a sprouts and chestnuts mix - it adds a hint of sweetness. Mmmmmm....
