We tend to have a bit of gammon to ring the chances, or just a repeat of Christmas Dinner with cold meat (chicken usually, not turkey), and maybe different veg.
Having had a frugal upbringing, where every bit of roast chicken was carefully allocated to make it stretch over 4 days, the freedom to just make a sandwich whenever you fancy, with as much chicken as you like, is one of the real joys of Christmas for me. My favourite version has a little leftover asparagus and hollandaise sauce in with the meat...
