Par boil in salty water, drain and let steam, then into the dish with the fat.

More or less what I do, but I let the spuds cool down before putting them into a hot roasting tin. In my experience, King Edwards make the best roasties.

everything in moderation. The occasional piece of bread dipped in warm 'home made' beef dripping is unlikely to do much harm....
