I assume the "S"s are "normal" Intermediate sprints for points only and The Red Bull Km (which doesn't read very well on that circular thing) is an intermediate sprint for bonus seconds only - or does it count for sprint jersey points too?

I think the points are a seperate red bull competition

Yes, the first two S symbols are normal intermediates, with 12, 8, 5, 3, 1 pts.
The unreadable one at Sauk today is the RedBull, with 6", 4", 2" seconds and 15, 8, 5, 3, 1 pts.
