Classic rare breed pork. Dark and gamey, and fatty too. Oven at 220 - on a wire rack for 30 minutes. Down to 170 and cubed butternut squash under the rack, and sage and onion balls on the rack. Cook up the apple very slowly for the apple sauce. Parboil the potatoes for roasted potatoes with a light crispy surface. What could be simpler?
