Sadly, bread may be restricted to the northern fringes of scotland.

To answer my own question, I fried it in butter for 1 minute, set aside, then sauteed onion & mushroom. Added tomatoes, fish stock, white wine, butter, parsley, well reduced down. Then put the fish on top and baked on a high heat for 5 minutes. Served with jasmin rice.

Delicious.
