Hi I’m looking to upgrade my hydraulic I’m looking at some shimano mt501/520 or the shimano m7100 just looking if any one got any thoughts on is one as good as the other thank you

They will be going on 180mm rotors

The 501 is 4 pistons the m7100 (SLX) is 2. The latter will be good for most mtb riding. I'd not bother with a 4 piston one unless you are doing a lot of downhill stuff
 
All other things being equal, 4 piston models offer better modulation than 2 pistons, but the downside is that you are more likely to get a fault or sticky pistons with the additional complexity, and the pads are slightly fiddler to replace, but not enough to make me think the benefit in modulation isn't worth the faff.

SLX.

Less expensive.

Excellent performer.

More robust.

Easier to clean/service/repair.

Modulation is still excllent, and the difference in modulation between SLX and 501 is overstated and most riders aren't good enougn to exploit it anyway (I'm an MTB instructor and most riders can't get the best out of what they've got, never mind anyrhing above and beyond).
