If you’re road cycling double file (with someone side by side), any ideas on how to check for cars approaching from behind without having to constantly turn your head?

Take your headphones off and listen for them.

They look rather neat. My OH bought the traditional, clamp to the bar, style & I don't think she's having much success. However she has fancy grips so they probably wouldn't fit.
T'other option is the "Bike Eye" which is frame fitting:

Reminds me of the mirror I had clamped to the fairing of my motor scooter.

Unless there's a reason you find it difficult to turn your head, I'd advise simply getting used to doing it more often. It's not just for checking; it communicates to drivers that you expect them to acknowledge your presence.
