Formula 1 but completely unsupported. No flights, truck fleets or massive logistics teams to move everything to the next stage. All drivers have to make their way to the circuit, in the car they will race in. Will necessarily involve crossing both closed borders and open water which would be exciting.

The Boats Race.
Oxford and Cambridge crews start in single canoes. First one to get their entire team (as well as the cocks) past the finish line win.

Why not have the cars operated remotely, or each racing around a different track. It has to be more exciting than the real thing.

This has been one of my issues with F1 of late, the technology exists to replace the drivers with drones.
A less charitable view would be that this has already happened.

I'd like to see javelin darts, with a massive dartboard with a bullseye at 70 metres and a diameter of 25 metres.

Solo batsman cricket.

Fielders, bowler and wicket keeper have to keep their distance.
New ball required when ball handled by a 2nd player.

Umpires adjudicate on VAR.

N is a big Wimbledon fan, so were discussing this; it does actually seem a feasible sport to do with no crowd, fairly safely. (No shaking hands! )

But it would be fun if they had to fetch the balls themselves in the Mens Singles Final!

(and it would be EVEN MORE fun with no line judges, players call everything - just a remote official to enter the scores on the TV company's computer for the spectator's benefit. Could Nadal resolve line-calls with his opponent without fisticuffs?!?)
A few B-list pros are playing no-crowd tennis. I think there is only a ref in the building with them (and cameras!):
