Whover produced that "infographic" should be sacked.
Even on that projection, they are not in a straight line. They are between a pair of parallel straight lines, there is no single straight line which would pass through all of them.
And as it is a projection into 2D of a 3D globe, it isn't really valid anyhow to talk about straight lines on it.

But if it's a Mercator projection, and I think it is, then it is valid to talk about straight lines. The Mercator projection "became the standard map projection for navigation due to its property of representing rhumb lines as straight lines." https://en.wikipedia.org/wiki/Mercator_projection
If you sail at a constant bearing then your progress on a Mercator projection map is a straight line.
So it would be more correct to say that "All countries starting with the letter "I" lie in a band constrained by the pair of parallel rhumb lines obtained by (insert definitions of lines here)" But it's not as snappy. And I bet some smart arse can come up with another country beginning with I.
With all that said, I'm still heartily unimpressed by this fact.
