To convert my caliper brakes in to cantilever brakes?

Thing is I am thinking of trying a spot of cyclocross this winter and appreciate a new set of tyrers and wheels will get me most of the way, I was wondering if I could change my brakes as well to prevent the mud getting clogged so quick!

Are there any add on conversion kits for this?

I'm not aware of any conversion kits to allow cantis to be fitted to a bike without canti bosses. If the bike is steel then you could always get some brazed on by a framebuilder, but then they'd be a permanent fitment. Also cyclocross frames are built with more clearance for mud between tyre & frame, which a caliper equipped frame may not have.

I once got an aluminium Milnes cyclocross frame from fleabay quite cheap (new), so you might get a bargain if you keep your eyes open.
