For the same reason that children like to emulate their football heroes by putting their jersey over their head and running around. Some cyclists like to think sportives are a race and that they are in the TdF so like the pros they copy them as well.
I just hope nobody gets things mixed up. Pretending to be a pro cyclist with your jersey pulled over your head could be a bit dangerous.

Seeing as taking your hands off the bars is also a 'no no' for victory celebrations (I believe, could be wrong), we should probably be thankful no pros read this. It'll be shirts over the head, or ghosting their bike across the finish line before you know it...

All pros take both hands off the bars when they cross the line first. It used to be banned in amateur racing in this country, hence the pictures of riders with just one hand in the air. It probably still is banned though I'm out of touch with racing rules now.
