I always carry 2 tubes, skabs, CO2 inflator, spoke key, multi tool, allen keys, gear cable (never good having to ride home in top gear!) and all my wet gear just in case. Some people think it's a bit over the top but I've never been stranded so all good! Due to the absolute rubbish tyres I currently have I can change a tube and be back on the bike within 5 minutes due to the amount of practice I've had recently lol
