I always find the first one in the pan comes out rubbish (probably not hot enough or something) but after the first they are much better. So you need to make more than one.

I agree... the dog always gets the first one

Too much oil or fat, possibly. Ever watched how the French make their crêpes? On a very hot griddle, with no more than a thin film of fat just coating the surface. Carefully spread out with a spatula so that every square cm is coated. That's how you need to do it. If you use too much fat, the excess will be absorbed in the first pancake you fry - but it'll be ruined.

[no baking powder unless drop scones]

Same for Yorkshire puds or pancakes...

always eat the first one however it turns out, with golden syrup...
