However...

Could you freeze the pancakes? You'd have to layer them with greasproof or something.

My Dad used to make the pancakes for Pancake day early in the day. just for convenience, and interleave them with paper, and then for dinner we had some rolled up and filled with savoury stuff and baked in the oven in cheese sauce, and some just reheaed in the oven to have with lemon and sugar etc.

I can't see why they wouldn't freeze and then be ok when defrosted - reheat in the oven or in a pan.

But you could third, or two-thirds the other stuff...

Pete: with a one egg recipe, presumably you could use a smaller egg? Blackbird maybe?

What about bantam eggs, how do they compare to standard chicken?

But I agree. ONE pancake? What's that all about?

I'd recommend a quail egg

That's quite a clever idea. I'll have to do a feasibility study.

I'm with the others -only one pancake!!! You must have an iron like will AiS!

Are you female, ttcycle? (I have some vague feeling you might be).

The only reason I'm asking is because if you are, there seems to be a male/female divide on this thread.

None of the blokes seem to think eating just one pancake is anything strange.

All the women think it is a demonstration of a will of iron...

It should work. My mum is partial (as am I) to Staffodshire oatcakes, which are thickish pancakes, made with oatmeal (and possibly no egg). We buy them, and freeze them fine. They are quite robust, so you can usually get the pack out, lever one off the frozen pile and defrost it. With pancakes, which are probably a bit more fragile, you may want to defrost the whole lot - so freeze them in bags in pairs or however many you are likely to want.

Yes I am female...however I asked the fella and he said he'd find it quite hard to just eat the one if he'd made up a load of pancake batter.

Good point Spinney - just goes to show that men are good at bare-faced fibs while women freely admit to temptation!
Go girls!

Ahem ahem....
I honestly have no idea how to make batter for just one pancake!
I think eating just one pancake is very strange, and I haven't had the op yet!

I suppose it depends how you plan to eat it/them. We often stuff them with a searing chilli beans mixture - the bland pancake taste offsets the spicy chilli really well (think: sort of fajitas without the fajitas - which gives me an idea AiS - why not forget pancakes, go out and buy some tortillas, and use them one at a time?). Anyway, two of these per head - three if you're really hungry - serves fine as a main course. So maybe one only - for a snack - works out, perhaps what I said above about one pancake being strange, I should take back?

That's probably illegal . Bantam might work.

That's probably a rather expensive solution. Take one standard hen's egg, beat it lightly, then pour away some of the liquid. If you want to be that meticulous: however too much egg (within reason) probably won't spoil the pancakes. Too little egg, will.

Being as I am guilty of eating only one pancake, I feel it only reasonable that I point out in my defence that I had only just knocked back two croissants with loads of raspberry jam prior to putting the batter in the pan.

One ......... pancake! You're weird ;) . Only kidding.

Right you inviting us all over to Deutschland to finish the job you couldn't?

Can't freeze pancake batter as egg in the mix, uncooked egg.

Three eggs in the mix must have made it pretty much an omlettte.

Vot is pancake auf Deutsch? Plattekuche?

Of course you can freeze the mix, you are cooking the egg after the freezing process. I wouldn t freeze the pancakes they ll be like cardboard. Can t understand why you are putting baking powder in though.

Aside from the insanity that is making pancake batter and only eating one (does not compute), you can cook the whole batch and freeze the cooked pancakes.

One pancake? Confusing.....
