I recall you mentioning cheese flapjacks recently. I'm willing to improvise, but if you have the perfect recipe, I'm all ears. I can't take any more sweet stuff...

There is this recipe from Julian on yacf.

Cheese & Onion flapjack

2 eggs (beaten)
50g butter
150g grated cheese
1 diced red onion
140g porridge oats

Melt the butter and stir in the porridge oats. Add the rest of the ingredients, mix and press into an 8 inch tin.
Bake for 30 - 40 minutes at 180 degrees.

CL's recipe, as given to me....

6oz oats
7-8 oz grated cheese
7-8 oz grated carrot
2 beaten eggs
salt
pepper
dried rosemary

Mix all together, press into a baking tray. Dot the top with little knobs of butter. Bake for 25 mins at about 180 degrees C. Cut up in the tray while still warm and cool on a rack.

I think she suggests half and half cheddar and A N Other cheese, you could experiment, I think I used cheddar and Leicester as it's what I had in. Also other herbs could be subbed, and some mustard might add a little zing.

Thanks! I'm surprised that CL's recipe is butterless, but I'll give it a go and report back. Perhaps with fresh rosemary or thyme, though, as they are abundant hereabouts. Longers, I'm not convinced about the onion, but otherwise that would have been closer to my guess-recipe. I've tried CL's cakes so I'm going to try hers first...
