To make perfect pulled pork, ignore that recipe completely. A long time in a smoker, low and slow is the only real way to make it. Ovens are cheating, you don't get the smoky flavour or the v v v important smoke ring. We brought back a small smoker from Texas a few years back, the food we get out of it is just amazing, but it's not quick. A brisket took 13 hours of fire tending, temperature regulation and beer drinking.

Pulled Pork is one of my most favourite things on this planet.
I have yet to find it in the UK that can compare to Pulled Pork made in the US.

Believe me I've looked v v hard, and no, not even close. Bodeans used to be ok, but since they got bought by venture capitalists has gone way downhill.

I like the pulled pork in the burgers at The Thirsty Bear in waterloo.
Theres a few places near in me in Croydon that i've been meaning to try.

apologies the places in croydon i knew about don't actually do pulled pork. Good looking burgers though. Burgers at blacks in purley and Cadillac diner in Shirely.
There is an america BBQ dinner under the flyover in central croydon, opposite where collonades used to be. But I haven't looked at the menu there.
