I can buy a frozen fillet of white fish here and it’s very reasonable. It’s a sea fish I think and has a taste and texture not dissimilar to plaice, labelled as Panga. As it’s frozen it loses a fair bit of flavour so I’m looking for a sauce to liven it up a bit. Any recommendations?

This is the cheese sauce I put on white fish:
Ingredients, 1 portion
  • 7g oil
  • 7g flour
  • 170cc milk
  • 20g grated cheese
  • 0.3cc Pepper
Method
  • Measure the milk and pepper into a jug.
  • Cook flour and oil for 1–2 minutes until it smells like biscuits baking.
  • Take the pan off the heat and gradually stir in the milk to get a smooth sauce.
  • Bring to the boil, stirring all the time.
  • Simmer gently for 8–10 minutes.
  • Stir in cheese. Don't re-boil the sauce or it will become stringy.

I'm doing Moroccan spiced fish with ginger mash using a couple of cheap frozen white fish fillets tonight:

Ingredients (1 portion)
  • 300g sweet potato
  • 2 skinless white fish fillets
  • 15g marge
  • 2.5cc dried garlic
  • 5cc harissa powder
  • Zest of ¼ lemon (juice will do)
  • 2.5cc coriander leaf
  • 10g ginger, finely grated
Method
  • Measure spices, grate zest, drain the fish, but don’t dry it unless using lemon juice.
  • Mix the marge with the garlic, harissa, lemon zest, and coriander.
  • Coat the fish with flavoured marge and wrap in foil allowing expansion space.
  • Boil the sweet potatoes for about 10 mins until tender.
  • Grill fish on floor of grill pan for about 6 minutes each side.
  • Grate ginger whilst fish cooks.
  • Mash the potatoes with the ginger and seasoning.

Or rub them with this, and fry:
  • Ground coriander
  • Thyme
  • Garlic powder
  • Oregano
  • Smoked paprika
  • Onion powder
  • Black pepper 0.3cc
  • Cayenne pepper 0.15cc
  • Mix with 10cc oil
Quantities are 0.6cc except where specified otherwise.
