Recommend me some rim tape

Gorilla tape here - both tubed and tubeless.

My local bike shop uses it for tubeless installations.

They have a bulk roll of ordinary rim tape for tubed which they can afford to 'give away' if needed when fitting new tyres and tubes.

Cheap insulation tape. Has never failed me. Really no need for any expensive brand named stuff.

It’ll tear cleanly in a line if you need to, but I use it full-width.

Black electrical tape. Available in any Poundland store. £1 for 4 rolls. I use it and it's never failed.

I have and it doesn't stand up under (rim) braking.

I did try electrical tape once - it just sunk into the spoke holes leaving sharp edges in no time - are folk using it using several wraps?

Yes. But I don't use only 1 layer of that tape. It's always few layers to ensure everything is covered. No problems with punctures or tyres or rims or spokes.
