although it states 8-115 psi on the tyre, I believe this is wired tyres

Personal preferences here I'm guessing....but I run 25 tyres on my bikes at around 90.

If you are a lighter person you could run a slightly lower pressure than a heavyweight. I don't have a bike with tyres that narrow so I cannot give any more advice.

You should use an online pressure calculator like this one https://silca.cc/en-gb/pages/pro-tire-pressure-calculator or this one https://www.pirelli.com/tyres/en-ww/bike/pressure-tool

The ideal pressure for you will not be the same as for me, or anyone else.

EDIT to add: I am 109kg, my bike is 11kg(ish), I use 28c Schwalbe Lugano 2 tyres and ride on generally less than perfect rural tarmac roads and lanes. According to the Silca calculator my ideal pressures are 72psi rear and 70psi front. I prefer something slightly firmer so have 75psi rear and 72psi front.

At ~104Kg for me and my carbon road bike, for 25mm tyres, I'd be inflating to ~95+psi front and 105+ rear.

Not that I've used a 25mm on the rear for years, even when lighter, been 30/32mm since '17.
