It's an Elephant Hawk Moth caterpillar, very easily found on the front page of "what's that caterpillar.co.uk"

Saw a stoat/weasel this morning, dead though. Didn't stop to look at the end of it's tail.

Easy to tell the difference, longers - weasels are weaselly recognised but stoats are stoatally different.
