Thank you! Re the orange rind - not in my book because I love bitter tastes! But the orange slices are poached in sugar to soften them before adding to the tart. The tart is cooked first with the custard filling and the slices are added on top for the final 10 minutes.Very elegant tart....what about the orange rind though? Do you need extra sugar to balance it out?
