I'm not Mr Kipling, but I do have some exceedingly good buns...I use cinnamon in a fruit loaf, I used to buy Schwartz ground cinnamon but was in Aldi and picked up their version, finer ground and more pungent. You get the aroma (?) as soon as you slice the loaf but the taste isn't overpowering.
Mind you, I do love a cinnamon bun with icing etc etc...
