I do however wonder what gearing she used that she could use to start off and still pedal at 187??

That's quite old. She set a women's record of 147mph in 2016 and the 184 record was 2018.
Motorpaced riding has a really interesting history that a lot of people haven't heard of.
In 1899 Charles "mile a minute" Murphy hit 60mph behind a train.
Jose Meiffret set set 127mph on an Autobahn in Austria in 1962
Fred Rompelberg went 167mph in 1995 and it was his record that Koronek-Mueller broke
In 2019 a Brit called Neil Campell went 174 mph which is the men's record or British record something like that.

Nope. Not as far as I know anyway.
Whenever videos about her are posted there's a lot of "yeah it's cheating I could do that" posting. I suspect this is because she's (a) American and (b) a woman.

I think @Peter Salt has got it sussed.
